Dormilona Chardonnay 2023

The Dormilona Chardonnay 2023 is a refined expression of Margaret River's terroir, crafted by the innovative winemaker Josephine Perry. Sourced from the organically managed Burnside vineyard, the grapes are hand-harvested and whole-bunch pressed into a combination of large-format oak and amphora. The wine undergoes natural fermentation, followed by malolactic conversion, resulting in a harmonious balance between fruit purity and subtle oak influence. 

This Chardonnay presents a bouquet of white peach, citrus zest, and a hint of flinty minerality. The palate is medium-bodied, with a creamy texture and bright acidity that leads to a lingering finish. The use of amphora imparts a unique textural element, enhancing the wine's complexity and depth.
