Timo Mayer
Red WineTimo Mayer Yarra Valley Pinot Syrah 2025
Among Yarra Valley winemakers, German-born Timo Mayer needs almost no introduction. Bombastic and wild, he crafts precise, ethereal, minimal-intervention wines from his close-planted Bloody Hill vineyard. Characterised by the presence of whole bunch fermentation and a restrained use of oak, his range includes Pinot Noir, Grenache, and Syrah that are impeccably structured, detailed, and compelling.
This wine is a new cuvée for Timo Mayer, representing an accessible entry-point to his style. It's a blend of 75% Pinot Noir from Bloody Hill, and 25% Syrah sourced from the nearby Gembrook Vineyard. Fruit is 50% whole bunch, with the rest destemmed.
It lands pale red purple in the glass, with a perfumed nose exuding roses, violets, and candied berries and plums. On the palate, fine-grained, persistent tannins and a herbaceous edge hem in the bright, jubey fruit. Licks of pepper and game meat carry a savoury finish. A detailed and transparent wine perfectly poised between lightness and structure.
