S. Caica 'Willunga' Rosato 2025

Simon Caica is an Adelaide-based winemaker with a degree in viticulture and oenology. He previously made wines under the name "Lust For Life" before moving to his own S. Caica Wines label.

The S. Caica Rosato 2025 is a vibrant, textural rosé crafted in South Australia's McLaren Vale by winemaker Simon Caica. Sourced from the Aplin family vineyard in Sellicks, it is uniquely made from whole-bunch merlot and co-fermented with vermentino. Whole-bunch means the grapes are pressed with their stems still attached, which gives the wine a crisp, crunchy texture. Co-fermenting means the two grape varieties are fermented together at the same time to mix their flavors and colors.
