Onannon was founded by winemakers Sam Middleton, Kaspar Hermann, and Will Byon, who met while working at James Haliday's Coldstream Hills winery. A change in leadership in 2026 means that Will Byron is now the sole winemaker.
He's spent the last chunk of his career as winemaker at Stonier, handling a diversity of parcels of Mornington Peninsula and Chardonnay. He brings that wealth of experience to Onannon, making highly particular wines that express the nuances of the Peninsula's geography.
Half of the grapes for this Pinot Gris were hand picked, with the other half harvested by machine in the cool of morning. The fruit was chilled, then pressed straight to old puncheons and barriques, where it was fermented with cultured yeasts, and completed natural malolactic conversion. The 2025 vintage balances fleshy orchard fruit and stone fruit with dried herbs and crisp salinity. It has a rounded, creamy texture and tangy acidity that carries through to the finish.
