The Assyrtiko grapes chosen for Thalassitis hail exclusively from vineyards situated in the Episkopi, Akrotiri, and Pyrgos areas. These venerable vines, nearing 80 years of age, yield a limited harvest, never surpassing 25 hl/ha. Such selectivity, combined with the local terrain and grape variety, forges a wine imbued with a robust character.

Produced in Santorini, the 'Thalassitis' Assyrtiko thrives on an island sculpted by fierce winds. Here, native grapes like Assyrtiko have adapted to combat the relentless environment. The cultivation method intensifies the grape flavors, introducing palettes of ripe citrus and honeysuckle, interlaced with a unique minerality and crucially, sharp acidity. 'Thalassitis' is a vivacious, mineral-rich dry white wine. Over time, it gracefully matures, revealing the signature honey and fruit notes of its varietal. It pairs splendidly with seafood or a quintessential feta and tomato salad, especially when served chilled.
