Produced in Santorini, the 'Thalassitis' Assyrtiko thrives on an island sculpted by fierce winds. Here, native grapes like Assyrtiko have adapted to combat the relentless environment. The cultivation method intensifies the grape flavors, introducing palettes of ripe citrus and honeysuckle, interlaced with a unique minerality and crucially, sharp acidity.
