Eminence 'Cute Brut' Zero Dosage Rosé NV

Clare Burder really knows how to make sparkling wine, and with some of the highest altitude vineyards in Victoria, she excels time and time again. 

The grapes for this wine were meticulously handpicked and softly pressed in whole bunches, then moved to seasoned French oak barrels for fermentation. No yeast, enzymes, or nutrients were introduced, and the fermentation temperature was maintained at approximately 15 degrees Celsius to retain the aromatic qualities. Following the primary fermentation, a slight addition of sulphur was made to the barrels, which then sat through the winter atop the yeast lees. Eleven months on, we crafted a blend consisting of 38% Pinot Noir (white base wine), 2% Pinot Noir red wine (to achieve that exquisite color), 30% Chardonnay, and 30% Pinot Meunier. The Chardonnay included a mix of vintages, whereas the Pinots were from the 2019 base wine - necessitating a non-vintage (NV) label for this wine. After undergoing a second fermentation (which generates the effervescence), it matured on lees for 30 months, culminating in disgorgement without any dosage.
