Carlos Raposo, formerly of Niepoort, has returned to his native Dão to craft wines of precision and restraint. The Ideal Branco blends Encruzado and Bical from old granite and schist vineyards at 400–500 metres. Fermentation with ambient yeasts in large neutral oak barrels lends texture and depth. Aromas of lemon peel, fennel, and smoke open into a palate that’s tense, layered, and bright. It captures Dão’s cool altitude and the quiet strength of its granite soils.
