The white grapes surviving in old Rapsani vineyards are rarities and are not accepted in the modern PDO. Roditis and Savatiano occur in small quantities among vineyards dominated by the red grapes for which the appellation is known, remnants of the mixed agricultural inheritance that preceded modern varietal and appellation systems. Papadopoulos has made the preservation of this material part of its work in the region, drawing upon both the vines and the knowledge of elderly local growers who remember how these vineyards were historically cultivated.
The 2025 Orange is a field blend led by Assyrtiko, Roditis and Savatiano, together with smaller quantities of other white varieties. After spontaneous fermentation, the wine remains on skins for three weeks before spending nine months in oak. At 12% alcohol it is dry and structured, with the extended maceration contributing fine tannin and a pithy texture. Red apple, cumquat and lemon are joined by ginger, dried herbs and savoury spice, with a pronounced briny character running through the palate. Despite the extended skin contact and élevage, brisk acidity keeps the wine fresh, finishing chalky, savoury and dry.
