The Kabaj estate, nestled in the rolling hills of Goriška Brda, Slovenia, has been crafting some of the country’s most celebrated wines since the early 1990s. This unique region, marked by a temperate climate, consistently yields wines that are dry, balanced, and often shaped by skin contact during fermentation.
Ravan incorporates fruit from 50-year-old vines planted in Italy, contributing depth and complexity. Made from Zeleni Sauvignon, nicknamed "sexy skin" by Jean-Michel for its especially soft skins, the grape is delicate and prone to botrytis, which often adds a subtle dimension to the wine. Despite fermenting on skins for over a week, Ravan is often mistaken for a white wine due to its greenish hue that persists even after bottling. Herbal, citric, and slightly spicy flavors combine with a glossy texture, making it an ideal companion for spring and summer dishes. The winemaking process blends Jez and Ravan, while Corno, kept separate, provides structure and depth. Though Zeleni is a high-yielding variety, careful cultivation and restricted yields result in expressive, high-quality fruit. True to Kabaj’s style, this wine is best enjoyed at room temperature, showcasing its nuanced character and regional heritage.
