Red WineSi Vintners ‘Halcyon’ Cabernet
Established in 1978, the Halcyon Block Cabernet thrives in white clay soil topped with karri loam, yielding a notably low crop. After basket pressing, it undergoes fermentation in concrete eggs and is then aged for around 12 months, harmoniously blending in both new and seasoned barrels. A limited run, with just 900 bottles crafted.
