Presenting the youngest Vinsanto from Estate Argyros, a testament to the exuberance inherent in such a wine. Meticulously chosen from ancient Assyrtiko, Aidani, and Athiri vineyards in Episkopi—no less than two centuries in age—specifically reserved for this distinctive style. Harvested at an exceptionally advanced ripeness, nearly a month post the primary picking, resulting in remarkably low yields.
The grapes undergo a meticulous sun-drying process spanning ten days, followed by natural fermentation and a three-year maturation in seasoned concrete vats. Subsequently, the wine ages for an additional four years in well-seasoned wooden vats. This Vinsanto is a luxurious expression with an emphasis on fruit. While ready for consumption upon release, its aging potential in the bottle is virtually boundless. The final yield is a mere 75 ml per square meter of the vineyard—a testament to the dedication and precision invested in its crafting.
