Originating out of its namesake Champagne region in France’s upper North-East, only select varieties like Chardonnay, Pinot Noir and Pinot Meunier processed with traditional technique in the region’s vineyards can gastronomically qualify under its appellation. Known infamously as the Méthode Champenoise (‘the Champagne Method’), the approach to winemaking involves a second fermentation in-bottle, wherein a second yeast solution is added to the base liquor and trapped for an amount of time - giving rise to the fizz of its carbon dioxide release.
