This wine is crafted entirely from Sauvignon Blanc grapes sourced from 20-year-old vines rooted in poor slate soils, cultivated biodynamically. Karl takes meticulous care in the vineyard, with an intense focus on biodynamic practices and manual labor, harvesting in early October. Only the finest grapes are hand-selected and processed. Fermentation occurs spontaneously in open vats, with manual pigeage, followed by 30 days of maceration. The wine then ages for 12 months in used barriques.
The nose features a complex blend of spice, caramel, apricots, and dried fruit, with a brutally taut, mineral palate that showcases fine tannins in perfect balance. The influence of the slate soil imparts a vibrant precision, with the aromatics of the Sauvignon Blanc subdued, allowing the terroir's earthy notes to dominate.
The wine is bottled by hand in small batches, unfiltered and without added sulfur. Karl Schnabel's natural wines are true reflections of their terroir and serve as a benchmark for natural wines from Styria.
