Sylvain Liotard, who fiercely values his independence, introduces himself as “chef de lui-meme, vigneron,” placing emphasis on being his own master before identifying as a winemaker. Transitioning from years of woodworking in Grenoble to a pursuit for a life closer to nature, Sylvain, through a mix of hard work and serendipity, found himself stewarding a vineyard nestled on the boundary of Isère and Savoie. It's here that Sylvain has blazed his own trail, yet he remains receptive to insights and guidance from peers, notably the seasoned vintners at Domaine Giachino.

Sylvain shares, "My daily goal is to find joy in my winemaking journey, to nurture the ecosystem around me, innovate within my craft, adopt biodynamic practices, and craft wines that capture the essence of the preceding year, sharing with all a slice of history.

Adopting organic and biodynamic methods means nurturing the soil, preempting illnesses, and relying extensively on herbal infusions and decoctions... while also minimizing intervention during vinification, monitoring the process meticulously each day, mastering fermentation techniques, and above all, cultivating patience and trust."

In line with his philosophy, Sylvain's approach to vinification in his quaint mountain winery is decidedly minimalist. His Apremont and Abymes varietals mature in fiberglass and steel tanks, whereas his other blends age for 6-10 months in previously used barrels.
