The estate's Chardonnay is grown at Coldstream on clay-rich soils derived from ancient Silurian sedimentary rock, with plantings encompassing several clones, including Mendoza, P58 and Bernard selections. The 2024 growing season concluded with warm, dry conditions through February and March, accelerating ripening and requiring careful harvest decisions. Picked between 16 and 29 February, the grapes were destemmed, crushed and fermented entirely in French oak barriques, with 30% new oak. Mount Mary deliberately avoids malolactic fermentation in its Chardonnay, preserving the fruit's natural acidity, while relatively firm pressing and regular lees stirring contribute texture and complexity. Following eleven months in barrel, the wine was bottled in April 2025. The 2024 combines white peach, pear, lime and green apple with subtle struck-match reduction, toasted nuts and white floral aromas. Concentrated yet finely detailed, the palate has considerable depth, savoury phenolic texture and precise acidity, with a persistent saline finish.
