Following gentle pressing and cold settling, fermentation took place primarily in stainless steel using cultured yeasts. Individual vineyard parcels remained on their lees until late May, when the final blend was assembled, before bottling in August. The wine combines ripe yellow peach, pear and nectarine with lime, fresh herbs and white floral aromas.
