The grapes were hand-harvested between 15 March and 4 April at relatively high ripeness, then whole-bunch pressed and fermented predominantly with indigenous yeasts in seasoned French oak barriques, with a smaller proportion fermented in stainless steel. Fermentation was arrested with 9.2 g\/L residual sugar remaining, after which the blended wine spent a further six months on lees in old oak barrels. The result is a richly aromatic, off-dry Pinot Gris, combining ripe peach, white nectarine and pear with vanilla, Turkish delight and subtle floral notes. The palate is generous and creamy, with concentrated stone fruit, gentle spice and sufficient acidity to balance its considerable weight.
