Fruit is hand-harvested, with a proportion of whole bunch retained, followed by indigenous fermentation and gentle extraction. Élevage is in French oak with a restrained but meaningful proportion of new barrels. The 2021 reflects a cooler, later season, giving red cherry, cranberry and rose with spice and a light savoury edge. The palate is finely structured, with persistent, precise tannins and a long, mineral line through the finish.
