Camille Thiriet’s approach is deliberately low-intervention: hand harvesting, a meaningful proportion of whole bunch, indigenous fermentation, and very gentle extraction, followed by élevage in neutral oak with minimal sulphur and no fining or filtration. The 2023 shows red cherry, cranberry and rose with a light spice note and a faint savoury edge.
