Merbein is home to the Chalmers nursery, and their mother block of vines, where they grow and test climate-tolerant grape varieties to supply vines to growers across the country, including Australia's first plantings of Fiano and Vermentino. The grapes were whole-bunch pressed and co-fermented, one quarter in a new French oak barrel, and the rest in steel. After 21 days of fermentation the wine rested in mostly neutral barrels for 6 months, with the only addition being a touch of sulphur before bottling.\u003c\/p\u003e\n\u003cp\u003eBlood Moon wines are made from responsibly sourced grapes, mostly from across Victoria.
