A skin contact wine of immense elegance, the Alter.native is handled with the same precision and meticulous care as all of Peter’s wines. He likes to say this is a red wine made from white grapes, a description of orange wine that deftly communicates the intention of serious skin-contact winemaking. Once in the cellar, the grapes are 95% destemmed (the difference of whole clusters is kept in the mix) and fermented in stainless steel. The natural fermentation lasts for a little less than two weeks. The wine is left on skins for four weeks. The wine is then gently basket pressed before going into wooden barrels (french oak, 25% new, and acacia). Malolactic takes place in barrel, and minimal SO2 is only added at bottling.
