Soki Soki in Pantelleria dialect means “soil rich in sand and pumice”. The Zibibbo vines are over 80 years old. Grapes from 11 different parcels are vinified individually, with the wines being blended only at the time of bottling. Maceration depends on the thickness of the skins and the degree of ripeness of the grapes and lasts from one day to three weeks. Francesco and Nicoletta use different types of containers to mature the wine: steel, fibreglass, chestnut barrels and glass demijohns. Full of aroma and balance.
