Securing a vintage opportunity with Domaine Fumey Chatline in the Jura is a rare enough thing, let alone being given the opportunity to make a wine with Jura fruit. The wine is made from Chardonnay grapes from Arbois that underwent natural fermentation with minimal sulfur added only during bottling. The whole berries were macerated for six days in a cool environment, then pressed into a milk vat to chill before being left to ferment in a fiberglass tank. The wine aged on fine lees for a year before being racked and bottled. The resulting wine is a beautiful golden hue with ripe apricot flavors, shortbread pastry notes, and a delightful minerality on both the nose and palate. The wine also provides a rich mouthfeel. It should be noted that this wine is not a yellow wine and has zero cloudiness.
