The Ochota family’s quest for their dream winery came to fruition in Lenswood, Adelaide Hills. The property boasted an ideal block of north-facing Burgundian cloned Chardonnay planted on a rock base comprised of quartz and ironstone, 550 meters above sea level. It was a match made in heaven, the ideal location for producing a cool climate Chardonnay of unparalleled quality.

The Slint, an exquisite wine from the Ochota Barrels range, is tightly wound and razor-sharp, much like the other “compressed” wines that the family produces. The winemakers employ a meticulous process to achieve this unique style, using almost exclusively seasoned oak barrels, a full malo, and bâtonage (lees stirring) that is carried out weekly for 18 weeks. The wine is then gently gravity-racked before being bottled.

This Chardonnay is textured and steely to its core, with a compelling modern Australian style that sets it apart. Its unique characteristics make it a standout wine, reflective of the meticulous attention to detail and passion of Ochota Barrels.
