After a careful selection, the grapes undergo a soft pressing, followed by fermentation in steel tanks at a controlled temperature. The base of this sparkling wine is refined on fine lees for 6 months with weekly battonages.
The aging on the lees in the bottle can take 18 to 24 months, followed by a careful manual remouage, that brings the residue of the yeasts to the top of the bottle for the last operation, the degorgement.
Straw yellow in colour with fine and persistent perlage. The nose perceives delicate notes of white flowers, which are completed by scents of bread crust and pastry. In the mouth it is complex and balanced, with good acidity and long olfactory taste persistence.
